Enjoyed around the world for the Christmas and New Year's holiday, Panettone is the most iconic fruit flavored bread all over Italy, finding its roots in Lombardia region. The traditional preparation is made with Lievito madre (stiff levain 50% hydration) and multi day stages of mixing and proofing to achieve the characteristic light and tender crumb.

In this 6-hour workshop with Grazia fromIfrom Grazia’s Baking, dedicatedto panettone, we will prepare the final dough for traditional panettone and explore the unique characteristics of the sourdough starter (lievito madre). We will learn how to prepare our sourdough starter for panettone dough, and we will also make a faster, so-called “modernist” version using dry yeast.

A very enjoyable amateur cooking course for all those who wants to learn how to deal with Lievito madre and make these traditional Italian cakes on their own in an easy and fun atmosphere.

This Workshop will be held in English with course material in English and German.

Grazia De Martino

is the maker behind Grazia's Baking. Motherhood gave her the opportunity to slow down and experiment with her Lievito madre "Grannie". Grazia is passionate about teaching home baking techniques and skills in English with a charming Italian accent. She has lived in the Middle East for more than a decade where she developed a great love and deep understanding of the local cuisine. She loves to combine Italian and Middle Eastern flavors while celebrating the Mediterranean.
